Hearty Beef Stew (Dutch Oven) - GF/LF/NF

Ingredients

  • 3lbs Chuck Roast - cut into bite size chunks

  • 3 onions, white or sweet - chopped into big chunks

  • 1 bag of baby carrots cut in half

  • 1 bag of baby potato’s cut in half

  • Half stick of butter

  • 10-20 garlic cloves

  • 1-2 tbs diced garlic

  • Apple cider vinegar

  • Rice Vinegar

  • 1 Box (32oz) Beef Bone Broth

  • 1 Cup of Beef Broth, low sodium

  • Flour

  • Salt

  • Pepper

  • A lot of Italian seasoning

  • Garlic Powder

  • Baking Powder

Directions

  • Put flour, salt, pepper, & garlic powder in a large zip lock bag

  • Put beef in bag and shake to coat thoroughly

  • Melt butter in dutch oven

  • Sauté beef in butter till browned on both sides, make sure not to overcrowd pan, sauté in batches. Set aside beef when finished

  • Deglaze the oven with a hearty splash of apple cider vinegar and a small splash of rice vinegar

    • Use a wooden spoon to avoid damage to the Dutch oven!

  • When the Dutch oven is deglazed, bring to a boil and toss in 2 of the onions.

  • Bring to a boil again and put in the carrots, potatoes, broth, salt, Italian seasoning, garlic, and a pinch of baking powder

  • Stir together, bring to a boil again, mix in beef

  • Move Dutch Oven into the oven for 1hr

  • Add last onions, stir and put back in oven for 30 mins

  • Remove and stir, let sit in pot with lid on for 15-30 mins before serving
