Easy French Onion Soup (Instant Pot) - GF/DF/NF

Ingredients

  • 5-8 Onions

  • 4-5 cups (or one box) of Low Sodium Beef Broth

  • 10ish Garlic Cloves

  • 3-4 tbs minced Garlic

  • 3tbs Flour

  • 3tbs Worcestershire

  • 1/4 cup Vinegar, I used a mix of apple and balsamic

  • 3tbs Honey

  • Mozzarella Cheese

  • Baguette

  • Black Pepper

Instructions

  1. Chop Onions into bite size chunks

  2. Sauté onions with the garlic in a little oil until soft and slightly brown

  3. While sautéing, make the slurry

    1. Whisk flour, honey, Worcestershire, vinegar

  4. Transfer to instant pot, add broth

  5. Using the sauté feature, bring to a boil, when it is bubbling, stir in the slurry

  6. Pressure cook on high for 15 mins

  7. Slow release for 5 mins and it’s ready to serve

  8. To serve:

    1. Place a pinch of mozzarella at the bottom of the bowl

    2. Add soup

    3. Top with toasted baguette, mozzarella, and a sprinkle of black pepper
