Cinnamon Apple Muffins

Makes 12 regular muffins or 6 large muffins
Ingredients:

  • 1.5 C GF All Purpose Flour

  • 1.5 Tsp Xanthan Gum

  • 1.5 C Oats (I used Bobs Redmill Old Fashioned)

  • 2.25 Tsp Baking Powder

  • 1 Tsp Coarse Salt

  • 3/4 C Sugar

  • 4-5 Tsp Ground Cinnamon

  • 2 Large Eggs

  • 1 Stick Butter, melted and cooled

  • 1/2 Cup Oat Milk (I used Oatly Extra Creamy)

  • 2-3 Granny Smith Apples, diced into small pieces, about 1/4 inch

Instructions:

  1. Preheat oven to 350F

  2. Mix dry ingredients

  3. Mix in wet ingredients

  4. Fold in apples

  5. Fill sprayed muffin tins close to the top (this will provide nice big bakery style muffins, these don’t rise a ton so you can be liberal filling the cups.

  6. Bake 30-40 mins, or until toasted on the top and toothpick comes out clean!
