Molly’s Meatloaf


Makes one loaf or 12 large muffins

Ingredients:

Loaf

  • 1lb ground beef

  • 1lb ground turkey

  • 2 large eggs

  • 3/4ish cup Panko Breadcrumbs

  • 2 diced onions +/-

  • 10+ diced garlic cloves (I usually use about 1 jar, save 2 spoons for the sauce)

  • 1/4 cup Worcestershire Sauce

  • 3tbs ketchup

  • 5+tbs of Italian seasoning (I just keep adding while I mix until I can see the seasoning liberally mixed throughout)

  • Salt and pepper

Sauce

  • 1/4 cup Worcestershire

  • 1/2 cup ketchup

  • 1/2 cup brown sugar

  • 3-4tbs white or rice vinegar

  • 2tsp garlic powder

  • 1-2 diced cloves of garlic or 2tsp of diced garlic from a jar. I also like to drain some garlic juice from the pre diced garlic jars.

Instructions:

  1. Heat oven to 375F

  2. Mix loaf ingredients

  3. Spray pan and put meat in, press down to fill corners

    1. I love to make these in muffin tins and have individual loaves for meal prepping!

  4. Whisk sauce and set aside, you want it to be the consistency of a runny paste (think honey)

    1. Add more brown sugar if you need it thicker

    2. Add more Worcestershire if you need it more liquid

  5. Bake approximately 30-45 mins or until top is browning and edges pull in from sides

  6. Spoon sauce onto top, make sure it covers the top completely and drips down the sides

  7. Bake for 10-15 more minutes

    1. I like to finish with about 3-5 mins under the broiler to get the sauce nice and sticky

  8. It should be done when it easily pops out of the pan and the edges are brown.

  9. Let rest for about 15 mins before removing from pan

    1. There will be a lot of liquid left in the pan, that’s good!!
