Seafood Pesto Pasta - GF LF

Ingredients

  • 2 cups of basil (pesto)

  • 1/3 cup of pine nuts (pesto)

  • Garlic (pesto)

  • Olive Oil (pesto)

  • 1 bag (about 2 cups +/- of Shredded Parmesan (Kraft is dairy and gluten free) (pesto)

  • S&P

  • 1 box of GF pasta

  • Preferred seafood such as:

    • Crab meat

    • Scallops

    • Shrimp

  • Diced Mushrooms

Directions:

  1. Sautée mushrooms and any seafood that needs to be cooked

  2. Put pasta on

  3. Make Pesto

    1. Using a food processor, pulse together basil and pine nuts

    2. Begin adding in oil until smooth

    3. Add in garlic to taste, I like mine very garlicky so I use 3-5 cloves

    4. Add in about 1 cup of shredded parmesan

    5. Blend, adding in more oil until desired consistency

  4. Drain pasta and mix everything together, let it heat up and serve, can garnish with leftover pine nuts and Parmesan
