Ginger’s Shrimp Macaroni Salad - GF LF NF
Ingredients:
Note: This yields a large amount for an event or holiday. Regular dinner size is 1/4 of the quantities below.
3 cups Light Mayo
8 tbs Apple Cider Vinegar
4 tbs Dried Mustard
2 tbs Old Bay
4 tsp Sugar
1 tsp Salt
1 tsp Pepper
2 16oz boxes of Pasta
5 lbs Steamed Shrimp chopped into bites (2-3 per shrimp)
Note: I get mine steamed with Old Bay
5 large stalks of Celery chopped
3 Red Peppers chopped
3 Orange Peppers chopped
4-5 Onions chopped
Directions:
Prepare the day prior to event
Combine sauce ingredients into a mixture in a large bowl.
Begin folding in cooled pasta slowly and then add in the shrimp
Let chill overnight and give it a stir prior to serving.
