Ginger’s Shrimp Macaroni Salad - GF LF NF

Ingredients:

Note: This yields a large amount for an event or holiday. Regular dinner size is 1/4 of the quantities below.

  • 3 cups Light Mayo

  • 8 tbs Apple Cider Vinegar

  • 4 tbs Dried Mustard

  • 2 tbs Old Bay

  • 4 tsp Sugar

  • 1 tsp Salt

  • 1 tsp Pepper

  • 2 16oz boxes of Pasta

  • 5 lbs Steamed Shrimp chopped into bites (2-3 per shrimp)

    • Note: I get mine steamed with Old Bay

  • 5 large stalks of Celery chopped

  • 3 Red Peppers chopped

  • 3 Orange Peppers chopped

  • 4-5 Onions chopped

Directions:

  1. Prepare the day prior to event

  2. Combine sauce ingredients into a mixture in a large bowl.

  3. Begin folding in cooled pasta slowly and then add in the shrimp

  4. Let chill overnight and give it a stir prior to serving.
