Classic Pancakes (GF, LF, EF)

Ingredients (makes 9 average size pancakes or 6 large)

  • 1C flour

  • 1 Tbsp white sugar

  • Pinch of cinnamon

  • 2 tsp’s baking powder

  • Pinch of salt

  • Splash of olive oil

  • 2tbsps vanilla

  • 2tbsps butter

  • Milk (I use oat milk)

Instructions

  • Mix all ingredients except milk while heating up a pan with a little oil

  • Slowly mix in milk until desired consistency, I like mine liquidy but not drippy, similar to a syrup so it’s pourable but not watery.

  • Dallop in pan and slightly spread into desired size and shape

  • When pancake easily lifts with spatula, it’s ready to flip, if you can’t move it on the pan, it’s not ready. Check the edges to give you a clue, if the edges start to pull up and look cakey instead of runny, it’s close to being ready.
