Classic Pancakes (GF, LF, EF)
Ingredients (makes 9 average size pancakes or 6 large)
1C flour
1 Tbsp white sugar
Pinch of cinnamon
2 tsp’s baking powder
Pinch of salt
Splash of olive oil
2tbsps vanilla
2tbsps butter
Milk (I use oat milk)
Instructions
Mix all ingredients except milk while heating up a pan with a little oil
Slowly mix in milk until desired consistency, I like mine liquidy but not drippy, similar to a syrup so it’s pourable but not watery.
Dallop in pan and slightly spread into desired size and shape
When pancake easily lifts with spatula, it’s ready to flip, if you can’t move it on the pan, it’s not ready. Check the edges to give you a clue, if the edges start to pull up and look cakey instead of runny, it’s close to being ready.
