Italian Meatballs - Meal Prep - GF LF NF

Ingredients:

  • 3lbs Lean Ground Beef

  • .5lbs Ground Turkey

  • 1C Breadcrumbs (I used Panko GF)

  • 3 Eggs

  • 16oz Frozen Spinach drained

  • 16oz Shredded Cheese (I used a combo of Mozz and Mild Cheddar by Kraft)

  • Dried Parsley

  • Italian Seasoning (I used McCormick)

  • Finely Diced and Sauteed Onions (I used 1 large onion)

  • Salt and Pepper

Instructions:

  1. Preheat Oven to 400 degrees

  2. Combine all ingredients listed

  3. Roll into 1-2” balls depending out how big you want them, we made 2” balls because we were eating them as is for lunches (no pasta)

  4. Bake until beginning to brown, then flip. Bake until bottom is browned, slice to confirm baked through. About 30-40 mins.
