Super Simple Summer Salad (GF/NF/V)

Ingredients

  • 1-3 Cucumbers chopped into large bites

  • 1-2 Onions chopped into large bites

  • 2-4 (or 2 cans) diced tomatoes

  • 1 glug of olive or vegetable oil

  • 3/4 C of Sugar

  • 3/4 C of Apple Cider (or preferred) Vinegar

  • Salt & Pep

  • Sprinkle of basil

Instructions

  1. Mix all ingredients and let marinate for at least a few hours

  2. As ingredients deplete, add in more to make it last!
