Super Simple Banana Bread, aka The Secret to Happiness (GF/LF/NF)

INGREDIENTS:

  • 3 Medium to Very Ripe Bananas

  • 1 Egg

  • 2 Splashes of Vanilla

  • 1 Tsp Baking Soda

  • 1 Tsp Xanthan Gum

  • 3/4 C Sugar

  • 1.5 C Flour

  • 1/3 C Melted Butter

  • 1 Package of Vanilla Pudding Mix (TOP SECRET INGREDIENT)

  • Pinch of Salt

INSTRUCTIONS:

  1. Heat oven to 350 degrees

  2. Spray loaf pan with cooking spray or butter

  3. Mix together bananas, egg, vanilla, and butter

  4. Slowly add in the remaining ingredients

  5. Dough should be thick and sticky (gross)

  6. Dump dough into baking pan and spread evenly (and with much difficulty) into the corners of the pan

  7. Bake about 50 minutes to an hour, using the toothpick/knife test to know when finished (comes out clean)

  8. Let rest for a moment and then it should easily come out of the pan

TIPS FOR EATING!! I ABSOLUTELY INSIST THAT YOU SLICE THIS AND TOAST IT, EAT IT WITH A LITTLE BUTTER, THANK ME LATER!

Very good banana bread! I like it because it isn’t overpowering with banana!
