Brunch Quiche (GF/LF/NF)
Ingredients:
Gluten Free Pie Crust - I use “Wholly Wholesome” which I find regularly at my local Giant and Sprouts. This comes with 2 crusts, so I usually make 2 pies.
5-6 eggs
1.5 - 2 cups shredded cheese - I prefer a cheddar variation, Kraft shredded is lactose and gluten free!
1/2 - 1 cup of milk - I use Oat Milk
Salt and Pepper
1 medium sized bag of spinach - Optional
Diced Ham - Optional
Bacon - Optional
Diced tomatoes - Optional
Instructions:
Preheat oven to 400*
Pre-bake the frozen pie crusts until slightly brown and no longer mold-able
Mix ingredients for filling
Start with the minimum amount of ingredients then add additional milk/cheese/egg depending on how much filling you will need for both pie crusts.
Fill pies
Bake until set - the middle will seem a little jiggly but set, toothpick check works here!
Be creative with alternative fillings!!
