Football Chili (GF/DF/NF)

Ingredients (6qt Instant Pot)

  • 2lbs Turkey Meat

  • 1 Large Sweet Onion - chopped

  • 2 Large Green Peppers - chopped

  • 2-4 Cloves Garlic - chopped

  • A Bunch of Scallions - chopped

  • 1 Small Can of Green Chiles

  • 2 Cans (Drained) or a Bag of Frozen Sweet Corn

  • 1 Can of Garbanzo Beans - Drained

  • 1 Can of Kidney Beans - Drained

  • 1 Can of Black Beans - Drained

  • 1 Large Can of Crushed Tomatoes

  • 1 Small Can of Tomato Paste

  • 1 Packet of GF Chili Powder (I use McCormick)

  • A Large Pinch of Salt

  • A Large Pinch of Old Bay

  • A Large Pinch of Cumin

  • A Large Pinch of Cajun Seasoning

  • 2 Cups Low-Sodium Chix Stock

Instructions

  1. Cook the Turkey meat until browned, drain fat

  2. Saute the garlic with a small portion of the onions in the instant pot

  3. Deglaze the bottom with the stock when the garlic becomes slightly browned and fragrant

  4. Pour in the rest of the ingredients including the meat and spices, stir well

  5. Pressure cook on high for 25 mins, slow release for 10 mins.

  6. Serve with toppings! (Sour cream, cheese, cornbread, hot sauce, etc.)
