Brunch Quiche (GF/LF/NF)

Ingredients:

  • Gluten Free Pie Crust - I use “Wholly Wholesome” which I find regularly at my local Giant and Sprouts. This comes with 2 crusts, so I usually make 2 pies.

  • 5-6 eggs

  • 1.5 - 2 cups shredded cheese - I prefer a cheddar variation, Kraft shredded is lactose and gluten free!

  • 1/2 - 1 cup of milk - I use Oat Milk

  • Salt and Pepper

  • 1 medium sized bag of spinach - Optional

  • Diced Ham - Optional

  • Bacon - Optional

  • Diced tomatoes - Optional

Instructions:

  1. Preheat oven to 400*

  2. Pre-bake the frozen pie crusts until slightly brown and no longer mold-able

  3. Mix ingredients for filling

    1. Start with the minimum amount of ingredients then add additional milk/cheese/egg depending on how much filling you will need for both pie crusts.

  4. Fill pies

  5. Bake until set - the middle will seem a little jiggly but set, toothpick check works here!

  6. Be creative with alternative fillings!!
