Semi-Homemade Blueberry Loaf (GF/LF/NF)

Ingredients

  • One box of Blueberry Muffin mix - I used Krusteaz

  • 3/4 C Vegetable Oil

  • 2 Eggs (I used my sisters fresh farm eggs! Check her homemade items out here: Barefoot Meadows Farm)

  • Generous splash of vanilla

  • Extra bloobs to your liking!

Instructions

  1. Preheat oven to 400 degrees

  2. Mix dry mix, oil, eggs, and vanilla

  3. Drain can of blueberries that comes in the mix, save about half the juice aside

  4. Mix in canned blueberries and any other blueberries you want to add, fold in gently to try not to smoosh them

  5. Pour in greased loaf pan

  6. Drizzle canned blueberry juice on top of dough, using a knife, gently stir the juice around to make pretty swirls on the top

  7. Bake approximately 35-45 minutes or until knife/toothpick comes out clean
