Instant Pot Jambalaya (GF/DF/NF)
Ingredients:
12-18oz of Sausage Links
Cooked Shrimp
3tbs Cajun Seasoning (I used McCormick)
Salt (as much as you want!)
2 Cups of Low Sodium Chicken Stock
4 Stalks of Celery - Chopped
1 Large Sweet Onion - Diced
4 Scallions - Chopped
Diced Garlic (as much as you want!)
1-2 Cups of Jasmine Rice - Uncooked
1 Large Can of Diced Tomatoes - Drained
Instructions:
Cook the sausage and slice into bite sized rounds
Prep all the veggies and put in the instant pot with the canned tomato’s
Turn the instant pot on sauté
Allow the veggies to heat up and wait to hear the the liquid bubbling, wait, stirring occasionally for 5 minutes or until the veggies begin to soften
pour in the rice, spices, and stock
Stir well
Pressure cook on high for 8 minutes
Slow release for at least 5 minutes
Stir in the meat
Close the lid and let heat up with the residual heat
Serve
