Meal Prep Instant Pot Roast (GF/DF/NF)

Three of us meal prep every weekend on Sundays, we usually make 5 lunches for each of us. We generally make 2 different meals for the week so that we don’t get too bored! One of my GO-TO meals is my chuck roast in the instant pot, it never fails, it’s easy, and it’s always a favorite!

Ingredients:

  • 3-4.5 Lb chuck roast, look for one with lots of marbling 🥩

  • 2 Lg white onions 🧅

  • Bag of mini potatoes 🥔

  • 1 container of shroomies 🍄

  • Broth (I’ve used beef or veg, I usually use low sodium)

  • Add anything else! I like to add baby carrots to this as well!

Instructions:

  1. Chop onion into big chunks

  2. Cut potato’s in half if they’re bigger but if they’re the little guys I leave them whole.

  3. Sear beef on all sides (you can do it in the pot but I prefer to do it in a pan on the stove bc there is more room and I reuse it in a min)

  4. Put rack in instant pot and fill broth to rack

  5. Put in potatoes/carrots 🥔

  6. Put in beef 🥩

  7. Top with chopped onions 🧅

  8. Cook - 3lb 1hr / 4.5lb 1 hr 30 mins

  9. Pressure slow release for 15 mins

  10. I cook my mushrooms 🍄 in the searing pan while it’s slow releasing

  11. Quick release and serve! The most difficult part is removing the meat because it’s going to fall apart like crazy 🤤
